I made a beetroot porridge for Alex’s dinner today and save for the part of the fibrous vegetable, he ate quite a lot. I have been told that Alex ate quite a big portion for his meals and I always lament the fact that he is a pint size. Oh well, hope the high metabolic rate stays with him throughout.
The recipe is similar to the red porridge I blogged before. I used lean minced pork, organic Japanese kailan and organic beetroot.
